The Wine is a Méthode Traditionnelle sparkling wine in the style of traditional Champagne. The term Cuvée can have several meanings; in this case we are referring to the blending of two wines and varieties to produce this blend. Pinot noir and Chardonnay are the primary varieties used in Champagne and this blend is an even mix of the two. The grapes were picked young and pressed very gently and fermentation occurred in a stainless-steel tank. The wine then underwent a secondary fermentation in bottle to create he natural carbonation. It sat aging in those bottles for 20 months, gaining complexity from the yeast, before being disgorged and finished for release.
